This is a very special cut! The hanger steak is usually the most tender cut on an animal, aside from the tenderloin. A hanger steak is known as "butcher's steak," because butchers would often keep it for themselves rather than offer it for sale due to its bold flavor and tenderness. Also, since there is only one per animal it is often hard to find and considered a treat.
